Cakes are loved by one and all. Freshly baked cakes and biscuits are savored by all age groups. The 3C cake is nothing but a carrot, cashew and chocolate chip cake. Very easy to make with most of the ingredients lying at your kitchen counters. It hardly takes time to bake this super soft and moist cake. It can also be served as a tea cake or as a snack for your kids.
Ingredients
Dry ingredients-
Maida – 1/2 cup
Castor sugar – 1/2 cup
Salt – a pinch
Baking soda – 1/4 tsp
Baking powder – 1/4 tsp
Wet ingredients-
Curd – 1/2 cup
Oil – 2 tbsp
Vanilla essence – 1/4 tsp
Star ingredients –
Carrot – 3/4 cup grated
Cashews – 10 chopped into pieces
Chocolate chip – 1 tbsp
Method
1. Keep all ingredients ready on your counter top. Sieve all the dry ingredients and keep aside. Please do not skip this step.
2. In a separate bowl mix curd , oil and vanilla essence. Whisk it till it forms a silky texture.
3. Incorporate the wet ingredients into dry ingredients and mix it slowly using the cut and fold method. Do not over mix.
4. Add in all the star ingredients- carrot, cashew and choco chips and give it a mix.
5. Grease a cake tin and pour the batter. Tap twice.
6. Preheat the oven at 180 degrees and bake the cake for 20 mins.
7. Check the cake in between. To check if the cake is completely done insert a tooth pick or a knife in the center of the cake. If it comes out clean then your cake is done. Else continue baking for few more minutes.
8. After 20 minutes remove the cake from the oven and put it on a rack for cooling once it is cooled completely then cut it.
Tips –
Measuring the ingredients is compulsory for a good cake. No approximations please.
Cake should be cut only after it is cooled.
Do not overmix.
