Yes you read it right. One batter four recipes. Make this idli, Dosa, uttapam and appe/ appam batter in the weekend and enjoy all South Indian breakfasts. You can make soft idlis, crispy dosas, spongy uttapam and delicious appam out of this batter. Also making this is super easy. As the measurement is also 4:1. So, I know u cannot wait and hence let’s dig into the recipe.
Ingredients
Idli rice – 4 cups
Udad dal – 1 cup
Methi seeds – 1 tsp
Salt – as required
Water – as required
Method
1. Take 4 cups idli rice. Wash well and soak in water for approx 6 hours. I soak it around 2 pm.
2. Take 1 cup udad dal wash well and soak for 6 hours. Add a tsp of fenugreek seeds to this while soaking.
3. Now, strain the water from udad dal and use the water for grinding. Add some water to your wet grinder and add the udad dal and fenugreek seeds. Add water little by little and grind for approximately 30 minutes. Take a dollop of the batter and drop in water. If the batter floats then the batter is ground perfectly. Take the udad dal batter out of the grinder and transfer it to a vessel.
4. Strain the rice and add it to the wet grinder. Add water slowly and grind it. This will take approximately 20 minutes. This should be ground to a rawa/semolina like consistency. It should be grainy to touch.
5. Now add the udad dal batter and salt to the rice batter and grind for five more minutes. The batter is now ready. Give a good mix with clean hands and allow it to ferment it overnight.
6. Fermentation process will take approx 8-12 hours depending on the place you live. If you live in a cold place then you may keep it inside a microwave with the lights on or wrap the vessel with a blanket to keep it warm.
7. 4 in 1 batter is now ready.
TIPS & TRICKS
1. It’s better to use whole udad dal also called as gota udad dal as it gives good volume and also ferments well.
2. Always grind using the water in which udad dal was soaked. This also helps in the fermentation process.
3. If you don’t get idli rice you may also use par boiled rice (also known as usna chawal, ukhada chawal) . This also gives good result.
4. It’s always better to use a wet grinder. Wet grinder ensures that the batter is not over heated and also gives good volume of udad dal.
