We all love chaat items and papdi is an integral part of the chaat family. Sev puri, dahi papdi chaat,aloo chaat, chole chaat or even eat the puri by itself or crush it and add it on top of your Bhel this is going to be the hero of any chaat. Crispy papdi and a cup of tea is pure bliss. But we all are hesitant to have it as it is a deep fried snack and generally made with maida or refined flour. So, let’s give an interesting twist to this papdi so that we can enjoy it guilt free.
Ingredients
Wheat flour – 1 cup
Rice flour or Suji Rawa – 2 tbsp (whichever is available)
Ajwain – 1/4 tsp (optional )
Asafoetida – 1/8 tsp
Salt – as per taste
Water – for making the dough
Oil – 1.5 tbsp + 1 tsp for greasing
Method
1. In a big bowl add wheat flour, Rawa or rice flour (I have added rice flour), ajwain, salt, hing and oil. Mix well. Slowly add water and form a tight dough. Cover and rest for ten minutes.
2. After ten minutes knead the dough for a minute. Apply oil to your rolling board and rolling pin. Take a ball of dough and roll it to a thin roti and cut circles with the help of a glass or cookie cutter. Prick the papdi with fork.
3. Take a baking tray and grease with oil. Place these papdis on the tin. Preheat the oven or microwave at 180 degrees Celsius and bake for 12 to 15 minutes . Crispy and tasty papdi is ready to be served.
TIPS
1. This quantity of wheat flour makes approx 30 – 35 papdis depending upon the size.
2. Do not forget to prick the papdi with a fork.
3. For a nice brown color brush oil on the papdi. If you feel the top is not cooked then turn the papdi and cook for two to three minutes.
4. You can also add crushed pepper, dry mint leaves, kalonji, etc as per your taste . You can enjoy these papdi with tea, make it as sev puri or dahi puri or papdi chaat as you wish.
