This is a typical dry potato sabzi from Maharashtra. This sabzi is so easy to make and everyone would love it. This is a comfort food. Have it with roti or dal rice this is just super amazing. It’s a super tiffin box recipe too. Let’s dive straight into the recipe.
Ingredients
Onion – 2 no’s thinly sliced
Potato – 5 no’s thinly sliced
Oil – 2 tbsp
Mustard seeds – 1 tsp
Asafoetida or hing – 1/4 tsp
Turmeric powder – 1/2 tsp
Red chilly powder – 1 tsp ( a combination of spicy plus Kashmiri chilly powder)
Salt – as per taste
Method
1. In a pan heat oil. Add mustard seeds and allow it to splutter. Add hing and turmeric powder. Now add thinly sliced onions and fry for two minutes.
2. Now add in the thinly sliced potato and mix well. Add salt and mix. Cover and cook for five minutes. Now add chilly powder and mix. Cook for seven to ten minutes till the potatoes turn crisp. Serve with rotis or dal rice.
