Barfi is an Indian sweet usually made with milk and sugar and flavored with cardamom. There are different varieties of barfi available in the market like coconut barfi, chocolate barfi, pistachio barfi, etc. Be it wedding or any other occasion we usually make sweets at home. Besan barfi is a homely sweet but making it is usually tricky as besan or chickpea flour tends to be raw sometimes. But following the below recipe would make you the master of this homely and flavorful barfi.
Ingredients
Besan or chickpea flour – 1 cup
Ghee – 1/2 cup
Sugar – 1/2 cup
Water – 1/4 cup
Saffron – few strands (optional)
Cardamom powder – 1 tsp
Cashews – handful finely chopped
Almonds – handful finely chopped
Raisins – few
Malai – 1 tsp (optional)
Method
1. In a heavy bottom pan add the ghee and allow it to melt. Now add the besan and keep stirring it continuously. The besan needs to be stirred till the raw smell goes away on low heat. For beginners you may stir it for 15 minutes and check the taste.
2. Meanwhile in a saucepan add water, sugar and saffron and allow the sugar to melt. We need sugar syrup of two string consistency ( the easiest way to check this would be that when bigger bubbles appear you may check it by dropping a few drops of the syrup in water and trying to form a ball). Once the syrup is ready switch of the flame.
3. To the besan add chopped nuts and cardamom powder. Also add the malai and mix well. Switch off the flame and add the sugar syrup. Mix well for few minutes. Then again keep on the flame and cook for two minutes. Transfer this mixture to a greased plate. Flatten it out and add chopped nuts for garnish ( this is again completely optional). Now allow the mixture to cool for 30 minutes. After half an hour take a knife and mark the barfi for desired shapes. Allow to cool completely and cut into pieces.
