Bread Recipe

This is a multigrain + refined flour bread .

We all love bread and specially kids love bread based snacks, sandwiches,etc. So to make it healthier I have added multigrain flour (here I have used ashirwad multigrain flour and little refined flour for the texture) . A good bread is known by its texture and taste. Making your own loaf is always healthy and you can make your weekly quota and store it and use as and when required. Quite simple to make and yes few tips and tricks will definitely work to make this bread your favorite. So let’s get started.

Ingredients

Multigrain flour – 1 cup + 1/4 cup

Refined flour – 3/4 cup

Salt – 1/2 tsp or as per taste

Ghee or oil or butter – 2 tbsp

Sugar – 1 tsp

Milk + water – 3/4 cup (you can use only milk or only water or half n half)

Yeast – 1 tsp ( I used active dry yeast, you may use bakers yeast or instant yeast also)

Method

1. First and foremost heat the milk and water mixture in a microwave for a minute. You should be able to insert your finger in this mixture and able to withstand. Do not overheat else your yeast may die. In a bowl add sugar, yeast and 1/4 cup milk . Mix well, close the bowl with a lid and allow it to rest for ten minutes. Do not disturb this mixture. Then after ten minutes you may check, your yeast might have fermented well and you shall notice a frothy texture on top. If not, keep it for five more minutes and check.

2. In a bowl add multigrain flour, refined flour, salt and this yeast mixture. Mix well. Then add one tbsp oil and slowly start incorporating the milk and water mixture (remaining 1/2 cup). Start forming a dough. You may notice that after five to seven minutes of kneading you get a sticky dough.

3. Now grease you hands with a tsp of flour and start kneading for five minutes. Then add one tbsp oil and knead for five more minutes. Gradually you shall notice that your dough does not stick anymore and a soft dough is formed. The tip here is to knead for a minimum of ten minutes. Do not skip this step.

4. After kneading roll your dough to a big ball and place it in a greased bowl. Cover the bowl and allow it to rest for an hour. Your dough will look like this after kneading.

5. After an hour, you shall notice that your dough has risen well.

6. Now remove the dough from the bowl and place it on your countertop and start kneading again for five to seven minutes. Form a log like structure and place it in the bread tin which is greased.

7. Now allow it to rest for 30-40 minutes. After 30-40 minutes the dough might have risen again. Now brush the top with milk. Then bake at 200 degree Celsius for 20-25 minutes.

8. Soft bread is now ready to be served.
