We all have childhood memories of seeing these biscuits in tea stalls or small vendors selling these biscuits or we being served these biscuits with milk. Call it butter cookies or Vennai biscuit or Benne biscuit or nankhtai it tastes the same and is melt in the mouth. Easy to make and a very tasty tea/milk/coffee accompaniment. Basically this biscuit is made up of refined flour or maida. But I have tried making it with whole wheat flour. Try yourself and enjoy.
Ingredients
Whole wheat flour – 1 cup
Butter – 1/2 cup
Powdered sugar – 1/4 cup
Salt – 1/4 tsp
Eliachi powder – 1/4 tsp
Milk – 1 tbsp
Baking powder – 1/2 tsp
Baking soda – 1/4 tsp
Method
1. Keep all the ingredients measured ready on a table. Butter should be at room temperature.
2. In a huge bowl add butter and sugar. Whisk well till the butter becomes light. This would take approximately 3-5 minutes.
3. Keep a seive on top of the bowl and seive whole wheat flour, baking powder, baking soda, salt. Mix well and add cardamom/ eliachi powder. Mix well with hands. Now add a tbsp of milk and form a soft dough.
4. Grease the tray with ghee or butter. Form small balls and slightly flatten it. Place it in the tray. Preheat the oven at 160 degree Celsius and bake for 17 minutes or till done. Once done place it on a wire rack and allow it to cool completely. Serve as desired.
TIPS
1. Allow the biscuits to cool completely before serving or storing.
2. You may skip cardamom powder and keep it plain as well or add more flavors like vanilla, chocolate, pista, etc.
3. Check your biscuits after 12 minutes. Some oven might take just 15 mins. So keep an eye on it.
4. The cracks on top of the biscuits indicates that it is baked well. So do not worry.
