Carrot Kheer

Fresh juicy red carrots are now in season and we need to utilize them to the fullest. The beautiful color and texture of the kheer and it’s taste is simply superb. Children and even elderly would definitely love this kheer. It can be a good dessert for any function.

Ingredients

Grated carrots – 2 no’s

Full cream milk – 2 glasses

Sugar – 1/4 cup or more as per taste

Cashews – 2 tbsp

Almonds – 2 tbsp

Ghee – 2 tbsp

Cardamom powder – 1/4 tsp

Saffron strands – few ( completely optional)

Method

1. In a pan heat ghee and add the almonds and cashews and fry till golden brown. Strain them from ghee and set aside. Now to the same ghee add grated carrots and sauté for five minutes.

2. Now, add two glasses of milk and cook on a slow flame for 15 minutes. Keep stirring in between and scrape the edges. Add saffron strands and sugar and cook for ten more minutes.

3. Add cardamom powder and fried nuts and serve hot, warm or cold.
