Coconut Milk Pulav

We all love pulav and biryani and generally every party has a rice variety in their menu. This coconut milk pulav has a very nice taste and can be made easily and directly in a pressure cooker. It’s a one pot meal. A great tiffin Box recipe for kids and office goers. Give this recipe a try and enjoy.

Ingredients

Basmati rice – 1 cup

Coconut milk – 1 cup

Water – 1 cup

Cloves – 4 no’s

Bay leaf – 1

Pepper corns – 8-10

Cinnamon – 1/2 inch

Ginger garlic green chilly paste – 1/2 tsp

Onion – 1 big

Carrot – 1 no chopped

French beans – 10 no’s chopped

Green peas – 1/2 cup

Small potato – 1 no chopped

Oil – 1 tbsp

Ghee – 1 tsp

Saffron – a pinch (optional)

Cumin seeeds or shajeera – 1/4 tsp

Garam masala – 1/2 tsp

Salt – as per taste

Method

1. Wash the rice and soak it for 10-15 minutes.

2. In a pressure cooker add oil and ghee and allow it to heat. Add cumin seeds, cloves, cinnamon, pepper corns , bay leaf and fry well. Add sliced onion, ginger green chilly and garlic paste and sauté for five minutes.

3. Add chopped carrot, beans, green peas and potato. Mix well and allow it to cook for another five minutes. Add rice and mix well. Now add the coconut milk, water and salt. Mix well and allow it to come to a boil.

4. Add a pinch of saffron and garam masala. Close the pressure cooker and let it cook for 3 or 4 whistles. Allow the pressure to release. Open the cooker and mix the pulav well. Serve hot or pack it in the tiffin with your favorite raita and papad.
