If you are an Iyengar bakery fan then this name would have bought butterflies in your stomach. Childhood is incomplete without their bakery goods. Their puffs, cookies, biscottis, bbj (bun butter jam) or their famous dilpasand. Soft bun generously stuffed with coconut, dry fruits, tutti fruity and that pleasant smell of the cardamom powder is to die for.
Every country has a distinct way to bake. But my favorite is the Indian bakery style items. Be it the mawa cake or this dilpasand or the bbj or the butter biscuits or the kharis or be it the desi melt in the mouth cookies laden with ghee or butter or almonds or cashews or just cardamom all these are a part of our wonderful childhood. The aroma from the bakery is so tempting that one shall forget the calorie intake. Iyengar bakery has its own style of baking their puffs or pastries. This dilpasand is one such favorite of my mom and mine. Our little rewards for passing exams or getting a centum in mathematics. But we never knew that as we grow we shall forget the achievements but still remember those little rewards.
I always craved for this and during this lockdown period when we all are within a set boundary a video notification popped in my mobile. None other than food lovers tv – Mr.Kripal Amaana. The way he describes food shows his extreme love and respect towards food. I couldn’t resist and the first thing after waking up the other day was to make the dilpasand. A special thanks here to Kripal sir for reminding us during this tough times our beautiful childhood and our association with Iyengar bakery.
Now let us have a look at this recipe.
Ingredients
Refined flour – 1 cup
Sugar – 1 tsp
Baking soda – 1/4 tsp
Baking powder -1/2 tsp
Salt – 1/2 tsp
Curd – 2 tbsp
Milk – 1/4 cup
Oil – 1.5 tsp
Water – 2 tsp
Desiccated coconut – 1/4 cup
Tutti fruity – 1/4 cup
Sugar for the filing – 1 tbsp
Cashews – few chopped
Raisins – few chopped
Almonds – few chopped
Cardamom powder – 1/2 tsp
Method
1. In a bowl add refined Flour, salt, sugar 1 tsp, baking powder, baking soda, oil, curd and milk and mix it slowly forming a dough. Once the dough comes together add 2 tsp of water. This shall make the dough sticky. Now keep kneading the dough till you get a soft and smooth dough.
2. Once the dough is nice and soft cover it with a cloth and allow it to rest for an hour.
3. For the filling, add desiccated coconut, tutti fruity, cashews, raisins, almonds , sugar and cardamom powder and mix well. Set this aside.
4. After an hour knead the dough for a minute and roll it to a medium thick sheet. Now generously spread the filling and close the bun. Do not fill till the edges as we won’t be able to close it. Grease a pan with lil oil or ghee and preheat the oven at 180 degrees Celsius and bake it for 30 minutes.
5. Allow it to cool and cut it into pieces and serve. Or dig into it as it is.
