Gulab Jamun

One of the most favorite sweet dish of every person and a must for all celebrations and functions. It is so much loved that now it’s a part of cakes too fondly called as Gulab jamun cake. We definitely get pre mixes in the market which is easy to make and turns good almost every time. But what if I say that we can make this premix at home and make gulab jamun at our own convenience? Ingredients

Milk powder or dairy whitener – 1 cup

Maida or refined flour – 3/4 cup

Baking powder – 1 tsp

Ghee – 2 tbsp

Oil – for frying

Water – 2 cups

Sugar – 2 cups

Cardamom powder – 1/2 tsp

Saffron – a pinch (optional)

Milk – 1/4 cup ( or as required)

Rose essence – 1/8 tsp (optional)

Lemon juice – 1 tsp

Method

1. In a big bowl, add milk powder or the dairy whitener (whichever is available), refined flour, baking powder and mix well. Your premix is ready. Store it in an air tight container and use as required by following the below steps. This quantity of premix shall give approx 20 to 22 jamuns.

2. Take the premix add 2 tbsp of ghee and mix well. You shall notice that the mixture turns crumbly. Now slowly add milk and combine. Do not apply force. Just combine and bring all together. Cover and set aside for ten minutes.

3. In a vessel take two cups of water and add two cups of sugar. Mix well. Boil till all the sugar dissolves. Add cardamom powder, saffron and lemon juice. Mix well. Boil for five more minutes till u get a sticky consistency sugar syrup. Switch off the flame and add few drops of rose essence.

4. Now apply ghee in your hands and slowly knead the dough without applying any pressure. Heat oil in a pan. It should not be too hot. Just medium hot. Make small portions of the dough and make it like a ball without any cracks. Slowly add the balls in the oil and fry in low heat. Strain the jamuns and set aside for few minutes. Once it is warm add to the syrup. Serve as required.
