Karela or bitter gourd is not a vegetable liked by all. But this vegetable is a power house of vital nutrients and must be consumed regularly. Try this recipe and even kids would enjoy as it has a unique combination with cashews and raisins.
Ingredients
Chopped bitter gourd – 3 no’s chopped into slices
Onion – 1 big onion chopped into thin slices
Cashew – 2 tbsp
Raisins – 2 tbsp
Oil – 1.5 tbsp
Mustard seeds – 1/2 tsp
Turmeric powder – 1/ 2 tsp
Coriander powder – 1/2 tsp
Red chilly powder – 1/2 tsp ( 1/4 tsp Kashmiri chilly powder and 1/4 tsp spicy powder)
Jaggery – 1 tbsp
Salt – as per taste
Garam masala – 1/2 tsp
Aamchur powder – 1/2 tsp
Method
1. In a pan heat oil and add mustard seeds. Allow it to splutter. Now add turmeric powder and coriander powder and mix. Add chopped bitter gourd, salt as per taste and mix. Cover and cook for five minutes.
2. Now add thinly sliced onions and mix. Cover and cook for ten minutes on a low flame. After ten minutes add chilly powder, jaggery, cashews and raisins. Give a good mix. Cover and cook till the bitter gourd is well cooked.
3. Add garam masala and aamchur powder and mix. Cook for two minutes. Serve with warm rotis or dal rice.
