Methi Muthiya is a crispy Gujarati snack. It is also used in many curries like undhiyo in Gujarat. Muthiya is a great evening snack. It has a blast of flavors and can be easily made and stored.
Ingredients
Methi leaves – 1 cup
Whole wheat flour – 1.5 cup
Besan or gram flour – 1/2 cup
White seasme seeds – 2 tsp
Ginger green chilly paste – 1 tsp
Curd – 2 tbsp
Sugar – 1 tsp
Turmeric powder – 1/2 tsp
Asafoetida or hing – 1/4 tsp
Salt – as per taste
Water – as required
Oil – 1 tsp + oil for frying
Method
1. In a bowl add chopped fenugreek leaves, turmeric powder, Asafoetida, sugar, ginger green chilly paste, salt, sugar, seasme seeds and mix well for a minute.
2. Now add whole wheat flour and gram flour and mix. Add curd and combine the flour. Add oil and try to form a dough. If the dough doesn’t combine then sprinkle water and form a dough. Dough consistency should be like puri dough. Cover the dough and allow to rest for ten minutes.
3. Heat oil in a pan. Oil should be medium hot. Pinch the dough and form cylindrical shapes. Deep fry on low flame till crisp. Serve as desired.
