Rawa Kesari is a home style sweet dish popular in the southern part of India. Rawa means semolina or Suji and Kesari means rich saffron color. This dish is super tasty and can be made within few minutes and with very few ingredients.This is a common sweet dish in most of the functions and the rich color and ghee makes this dish to stand out.
Ingredients
Semolina / Rawa – 1 cup
Ghee – 3/4 cup
Water – 3 cups
Sugar – 1 cup (or as per taste)
Dry fruits – 1/4 cup ( cashews, almonds, raisins , chirotti)
Cardamom powder – 1/2 tsp
Saffron/Kesari Food color – 3 drops ( adjust according to color required)
Method
1. Heat water in a pan. Allow it to boil.
2. In a pan add a tbsp of ghee and roast the nuts and set aside.
3. To the same pan add a tbsp of ghee and roast the Rawa till golden brown in color.
4. Reduce the flame and add boiled water slowly and keep stirring continuously. Add sugar and mix well.
5. Add food color and cardamom powder. Mix well. Add remaining ghee and nuts and mix well. Cover the pan with a lid and allow it to cook for five minutes. You might notice that the entire mixture have left the sides of the pan and now is non sticky. Rawa Kesari is now ready to be served. Serve hot.
