Sindhi koki is an Indian flat bread recipe which tastes great by itself or a cup of tea. It’s a popular and delicious breakfast of the Sindhi community. Also, it’s a great travel partner too. We have a lot of traditional foods that we carry during long distance travels by train or by road. Each community has their own lunch box packing style and delicacies. Puliyogare, idli molgapodi most commonly packed lunch or breakfast of South Indians and thepla, puri bhaji, ajwain Paratha, koki, etc for the North Indians. These foods stay for a longer duration and tastes best too. Koki is one such dish which is a perfect travel partner as well as a tea time relish too. You can also pack for your kids lunch box. These recipes always rekindle the joy of traveling in train and enjoying these traditional recipes.
Ingredients
Wheat flour – 1 cup
Gram flour or besan – 1/4 cup
Onion – 1 finely chopped
Green chilies – 1 no finely chopped
Chopped coriander leaves – 1/4 cup
Ajwain – 1/4 tsp
Turmeric powder – 1/4 tsp
Chilly powder – 1/4 tsp
Coriander powder – 1/4 tsp
Crushed pepper corns – 1/8 tsp ( optional)
Salt – as per taste
Oil – 1 tbsp
Ghee – for roasting the koki
Water – as required
Method
1. In a huge bowl add whole wheat flour, gram flour, salt, ajwain, crushed pepper, turmeric powder, red chilly powder, coriander powder and mix well. Now add onions, green chilly and coriander leaves. Mix well. Add a tbsp of oil and mix well.
2. Gradually add water and form a soft dough. Allow it to rest for ten minutes. Now make small balls out of the dough and roll it into small discs. Take a knife and draw Criss cross markings and roast the koki on low flame by adding ghee.
3. Serve hot or pack it and serve as and when desired.
