Vermicelli Upma

A very easy breakfast to make in busy mornings. Add in a lot of veggies and you are all set to go.

Ingredients

Roasted Vermicelli – 1 cup

Oil – 2 tsp

Mustard seeds – 1/2 tsp

Udad dal – 1/2 tsp

Chana dal – 1/2 tsp

Curry leaves – few

Hing or asafoetida – 1/4 tsp

Onion – 1 small thinly sliced

Vegetables – 1/2 cup ( you may add carrots, French beans, peas, Capsicum etc. any vegetable of your choice)

Water – 1.5 cup

Turmeric powder – 1/2 tsp

Green chilly – 2 no’s chopped

Method

1. In a pan heat oil add hing, mustard seeds, udad dal and Chana dal. Roast well. Add curry leaves and green chilly.

2. Now add sliced onions and fry for two minutes. Add vegetables of your choice and fry well. Add salt as per taste. Now add the vermicelli and mix well. Add water and cover and cook on low flame till done. It takes approximately five minutes for the vermicelli and vegetables to cook. Serve hot.

3. You may add Maggie masala or garam masala as per your choice. You can add any veggies of your choice. You may also just add onion and make this Upma. It tastes great in either of the combinations.
