Beetroot is a healthy root vegetable. Besides using it as food it is also used as a coloring agent. Rich in many vitamins like A and B and also rich in iron this is indeed a superfood. Thoran (a Malayalam word for stir fried vegetable basically using coconut) is a regular preparation in the southern part of India. Mildly spiced it’s very healthy for all age groups. You can make Thoran out of many vegetables like carrot, beans, cabbage, snake gourd, lady’s finger, etc. Have it with plain rice or sambar rice or Rasam rice or curd rice it just tastes very good. It’s good for weight watchers too. Beetroot Thoran is very healthy as it is mildly spiced. Prepared in just a teaspoon of coconut oil this is very nutritious. Perfect blend of the vegetable and coconut makes this dish healthy.
Ingredients
Beetroot – 3 no’s
Coconut – 1 cup grated
Green chilly – 1 no
Coconut oil – 1 tsp
Mustard seeds – 1 tsp
Udad dal – 1 tsp
Curry leaves – 2 tsp
Salt – as per taste
Water – as required
Method
1. Wash and chop the beetroot to small pieces. In a pan add water and the beetroot along with salt and cook till the beetroot turns soft.
2. Coarsely grind half cup coconut and green chilly and add it to the beetroot.
3. Now in a tempering pan add coconut oil and allow it to heat. Now add the mustard seeds, udad dal and allow it to splutter. Add the curry leaves also to the tempering. Add the remaining grated coconut and mix well.
