Dal Vada

Every tea has a companion. Just like the Iranian cafe’s chai and brun maska or home style chai and Parle -g biscuits or tea and masala vada or dal vada or chai and pohe the authentic Maharashtraian style or chai and fafda or the English style tea and cakes, these companions are inseparable. Every tea stall down the south has these crispy dal vadas or masala vadas . A bite of these crispies along with a sip of tea is just heavenly. People enjoy these snacks along with some gossips and newspaper reading.

This snack is a perfect companion during the rainy season. But we Indians like our fried snacks at any time of the day. Try out these crispy and delicious dal vadas flavored with cabbage and onions.

Ingredients

Chana dal – 1 cup

Tur dal – 1/4 cup

Udad dal – 2 tsp

Curry leaves – handful

Green chilies 2 no’s

Ginger – 1 inch

Coriander leaves – 1/4 cup

Chopped cabbage – 1/4 cup

Chopped onion – 1/4 cup

Salt – as per taste

Oil – for frying

Method

1. Wash all the dals together and soak them for 3 hours.

2. Strain the dals and remove all the water. In a blender add the dals, green chilly, ginger, curry leaves and blend it coarsely. Do not make it to a paste. The more the coarse the more the crispier.

3. To this dal mixture add coriander leaves, cabbage and onion. Mix well and add salt. Heat the oil. Once the oil is nice and hot take a small Ball of the dal mixture flatten it out and deep fry in low flame till crisp. Serve it hot with your favorite dip and a hot cup of tea.
