Plain Dosas are savory thin pancakes originally from southern part of India. You can make many variations to this dosa. Different variations will follow soon in my blog. Now let us look the first item in the dosa section of any restaurant ā the humble plain dosa.
Ingredients
Udad dal ā 1 cup
Boiled rice ā 2 cups
Raw rice ā 1 cup
Methi or fenugreek seeds ā 1 tsp
Salt to taste
Method
For the batter :
1. Wash the dal and rice. Soak the dal and rice separately. Soak the methi along with the dal.
2. Soak for 6 hours.
3. Grind the dal first along with the methi seeds. Grind to a thick batter. Then keep it aside. Then grind the rice to a smooth paste.
4. Add the rice paste to the udad dal and add salt as per taste.
5. Mix it well ( preferably with hands). Mix it in the same direction. Cover and keep it in a warm place for 6 hours and allow it to ferment.
6. Your fermented dosa batter is now ready.
Method
For the crispy dosas :
1. Take a skillet or Tawa and grease it with oil.
2. Pour a ladle full of batter and spread it thinly. Smear oil or ghee and allow to cook. Flip and cook till crispy.
3. Crispy dosas are now ready to be served with Chutney or sambar.
