Basic Sponge Cake

Cakes are everyone’s delight. A soft fluffy cake is a bakers happiness. Sponge cake is very easy to make and also is a perfect tea cake. A slice of cake with a cup of coffee or tea makes tea time worthy. Sponge cake is good for school snack also. Its a classic rich English cake. When you master to bake this you can bake mostly all cakes with added flavors. So master this cake with the below recipe.

Ingredients

All purpose flour/ maida – 1 cup

Curd – 1/2 cup

Oil – 1/2 cup

Powdered sugar – 3/4 cup

Baking powder – 1 tsp

Baking soda – 1/2 tsp

Vanilla essence – 1/2 tsp (optional)

Milk – 1/2 cup

Method

1. In a bowl add sugar and curd and mix it well till silky texture is formed. Then add oil and vanilla essence and mix well.

2. Sieve all purpose flour, baking powder and baking soda into the wet ingredients. Mix slowly using the cut and fold method.

3. Add milk gradually and mix.

4. Grease a baking tin and preheat the oven @ 180 degree Celsius.

5. Bake for 35 minutes or till done. Unmould the cake in a wire rack and allow it to cool. Slice them and serve as desired.
