Mumbai is known for its street food. We can see an array of vendors selling different types of street food in the busy areas of Mumbai, near the beaches and let me tell you nothing can beat the taste of these delicacies. Tawa pulav is one such invention at the pav bhaji stall. Piping hot pulav is made in huge pav bhaji tawas and served with some roasted papad and raita. It’s a visual treat to the eyes . This recipe can be prepared at home as well in cooker or in any other pot.
Ingredients
Basmati Rice – 1 cup soaked for half an hour
Butter – 1 tbsp
Onion – 1 finely chopped
Tomatoes – 1 finely chopped
Carrot – 1/2 diced
Potato – 1 diced
Capsicum – 1 finely chopped
Green peas – 1 cup
Cauliflower – 1 cup
French beans – 1/2 cup finely chopped
Ginger garlic paste – 1 tsp
Cumin seed – 1 tsp
Turmeric powder – 1 tsp
Kashmiri red chilly powder – 1 tsp
Pav bhaji masala – 1.5 tsp
Coriander leaves – for garnish
Lemon juice – juice from half lemon or as required
Salt – as per taste
Water – as required
Method
1. Cook the rice and set aside.
2. Cook the vegetables except capsicum and set aside.
3. In a pan add butter and cumin seeds and allow it to splutter. Then add chopped onions and ginger garlic paste and sauté for two minutes then add chopped capsicum and fry for three minutes till the capsicum is well cooked.
4. Now add tomatoes and cover and cook for five minutes. Add salt, turmeric powder, Kashmiri red chilly powder and pav bhaji masala and mix well. Add the cooked vegetables and give it a good stir.
5. Now add the rice and mix well. Cover and cook for two minutes. Add lemon juice and coriander leaves and serve hot with raita and roasted papad.
